Ingredients

Dry Ingredients:

  • 2½ cups (300 g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 1½ cups (300 g) granulated sugar
  • 3 small or medium lemons, zested (about 2 large lemons)
  • 1 cup (226 g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon (5 ml) vanilla extract

Additional:

  • 1 cup (105 g) fresh blueberries
  • ¼ cup (50 g) granulated sugar for rolling (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt butter: Melt the butter and let it cool in the fridge for 10 minutes.
  3. Prepare dry ingredients: In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  4. Mix wet ingredients: In a large bowl, combine sugar and lemon zest, then add melted butter, egg, egg yolk, and vanilla extract.
  5. Combine dry and wet: Stir the dry ingredients into the wet mixture, then gently fold in the blueberries.
  6. Shape and bake: Scoop dough into balls, roll in sugar if desired, place on baking sheet, and bake for 10-12 minutes.
  7. Cool and enjoy: Let the cookies cool on the baking sheet before transferring to a rack to cool completely.

Notes

  • Store baked cookies in an airtight container at room temperature or in the fridge for up to 5 days.
