Description

This Italian Sausage Orzo recipe is a comforting and flavorful dish that is perfect for a cozy weeknight dinner. The combination of savory Italian sausage, creamy orzo pasta, and fresh spinach creates a satisfying meal that the whole family will love.


Ingredients

Italian Sausage:

  • 16 ounces Italian sausage

Onion Mixture:

  • 1/2 medium onion, chopped
  • 3-4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional, or more to taste)

Orzo Mixture:

  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan
  • 2 cups fresh baby spinach, packed
  • Salt & pepper, to taste


Instructions

  1. Cook the Sausage: Add the sausage meat to a soup pot/Dutch oven. Over medium-high heat, cook it for 5 minutes.
  2. Sauté Onions: Stir in the onions and continue cooking for another 5 minutes until the sausage is browned and the onions are softened.
  3. Add Flavorings: Stir in the garlic, red pepper flakes, and orzo, and cook for 30 seconds.
  4. Cook Orzo Mixture: Stir in the chicken broth and cream. Cook uncovered for 10 minutes, stirring often until the orzo is cooked and the mixture thickens.
  5. Finish and Serve: Remove from heat, stir in parmesan and spinach. Cover for 3-5 minutes until thickened. Season with salt & pepper, then serve.

Notes

  • Ensure to stir the orzo mixture often to prevent sticking.
  • You can adjust the spice level by adding more or less red pepper flakes.
