Ingredients
Italian Sausage:
- 16 ounces Italian sausage
Onion Mixture:
- 1/2 medium onion, chopped
- 3-4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional, or more to taste)
Orzo Mixture:
- 1 cup uncooked orzo pasta
- 2 cups chicken broth
- 1 cup heavy/whipping cream
- 1/2 cup freshly grated parmesan
- 2 cups fresh baby spinach, packed
- Salt & pepper, to taste
Instructions
- Cook the Sausage: Add the sausage meat to a soup pot/Dutch oven. Over medium-high heat, cook it for 5 minutes.
- Sauté Onions: Stir in the onions and continue cooking for another 5 minutes until the sausage is browned and the onions are softened.
- Add Flavorings: Stir in the garlic, red pepper flakes, and orzo, and cook for 30 seconds.
- Cook Orzo Mixture: Stir in the chicken broth and cream. Cook uncovered for 10 minutes, stirring often until the orzo is cooked and the mixture thickens.
- Finish and Serve: Remove from heat, stir in parmesan and spinach. Cover for 3-5 minutes until thickened. Season with salt & pepper, then serve.

- Ensure to stir the orzo mixture often to prevent sticking.
- You can adjust the spice level by adding more or less red pepper flakes.
