Instructions
- Preheat the oven: Preheat the oven to 350 degrees F (175 degrees C). Gather all ingredients.
- Prepare carrots: Place whole carrots in a baking dish and drizzle with olive oil; toss until carrots are completely covered with oil. Drizzle honey over carrots, then season with salt and pepper; mix until well coated.
- Bake: Bake in the preheated oven until carrots are just tender, about 30 minutes, or longer if you prefer softer carrots.

Notes
- Sprinkle some fresh thyme leaves or chopped parsley on the roasted carrots for added color.
- I reheat any leftovers in a hot oven for 5 to 10 minutes so the carrots maintain their glaze and texture. You could also reheat them in a pan with a little butter, if you prefer.
