- 750 grams frozen spinach, packed and thawed
- 1 cup plain Greek yogurt
- 1 cup parmesan cheese
- ½ cup mayonnaise
- ½ cup sour cream
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 1½-quart baking dish to prepare it for the dip.
- Prepare Spinach: Thaw the frozen spinach and strain it thoroughly to remove as much excess moisture as possible, ensuring the dip does not become watery.
- Sauté Onion and Garlic: Heat the olive oil in a large pan over medium-low heat. Add the minced onion and cook for about 5 minutes until softened. Then add the minced garlic and cook until fragrant, about 1 minute.
- Melt Cheeses: Add the cream cheese and 1 cup of the mozzarella cheese to the pan with the onions and garlic. Stir continuously until the cheeses are fully melted and combined, forming a creamy base.
- Mix Ingredients: Remove the pan from heat. Stir in the chopped artichoke hearts, strained spinach, Greek yogurt, parmesan cheese, mayonnaise, and sour cream until everything is well blended.
- Bake the Dip: Pour the mixture into your prepared baking dish. Bake in the preheated oven for 20 to 25 minutes, or until the dip is bubbling around the edges.
- Broil (Optional): For a golden, bubbly top, turn on the broiler for 2 to 3 minutes at the end of baking. Watch closely to avoid burning.
