Ingredients

Meat and Vegetables

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup frozen peas (optional)

Spices and Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Liquids and Oils

  • 1 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook the Ground Turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spatula, about 5-7 minutes.
  3. Add Vegetables: Add chopped onion and minced garlic to the skillet with the turkey. Sauté for 3-4 minutes until the onion is translucent and fragrant.
  4. Season the Mixture: Stir in paprika, cumin, salt, and black pepper until the spices are evenly combined with the turkey and vegetables.
  5. Combine Sweet Potatoes: Add the diced sweet potatoes to the skillet and mix thoroughly to combine with the turkey mixture.
  6. Add Broth: Pour in the chicken broth and stir well. Let the mixture simmer for 5-7 minutes until the sweet potatoes begin to soften but are not fully cooked.
  7. Transfer to Baking Dish: Pour the turkey and sweet potato mixture into a greased 9×13-inch baking dish, spreading evenly.
  8. Add Peas: If using, sprinkle the frozen peas evenly over the top of the mixture.
