Ingredients
For the Rice:
- 1 cup long grain white rice
- 2 cups chicken broth (low sodium)
- ¾ teaspoon salt
- ½ teaspoon lime zest
- ½ teaspoon fresh lime juice
- ¼ cup fresh cilantro (chopped)
For the Ground Beef:
- 1 pound ground beef
- 1 tablespoon tomato paste
- 1 tablespoon apple cider vinegar
- 1 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ¾ teaspoon salt
- ¼ teaspoon oregano
- ½ lime (juiced)
- 1 tablespoon avocado oil
Toppings:
- black beans (drained and heated)
- ½ cup tomatoes (diced)
- white queso
- 1 cup green lettuce (sliced)
- ½ cup roasted corn salsa
- ½ cup sour cream
- diced avocado or homemade guacamole
- fresh cilantro
Instructions
- Prepare the Rice Heat oil in a skillet, toast rice, add broth and salt, simmer covered for 20 mins. Fluff rice, then add lime zest, juice, and cilantro.
- Prepare the Meat Brown ground beef, drain grease, add tomato paste, vinegar, spices, and lime juice, cook for 2-3 mins.
- Assemble the Bowls Layer rice, meat, beans, and toppings in bowls.

- You can customize your burrito bowl with your favorite toppings like salsa, guacamole, or jalapenos.
- Feel free to substitute ground turkey or chicken for the beef for a lighter option.
