Description

These Ground Beef Burrito Bowls are a delicious and satisfying meal featuring seasoned ground beef, flavorful rice, black beans, fresh veggies, and creamy queso. Perfect for a quick weeknight dinner or meal prep.


Ingredients

For the Rice:

  • 1 cup long grain white rice
  • 2 cups chicken broth (low sodium)
  • ¾ teaspoon salt
  • ½ teaspoon lime zest
  • ½ teaspoon fresh lime juice
  • ¼ cup fresh cilantro (chopped)

For the Ground Beef:

  • 1 pound ground beef
  • 1 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt
  • ¼ teaspoon oregano
  • ½ lime (juiced)
  • 1 tablespoon avocado oil

Toppings:

  • black beans (drained and heated)
  • ½ cup tomatoes (diced)
  • white queso
  • 1 cup green lettuce (sliced)
  • ½ cup roasted corn salsa
  • ½ cup sour cream
  • diced avocado or homemade guacamole
  • fresh cilantro


Instructions

  1. Prepare the Rice Heat oil in a skillet, toast rice, add broth and salt, simmer covered for 20 mins. Fluff rice, then add lime zest, juice, and cilantro.
  2. Prepare the Meat Brown ground beef, drain grease, add tomato paste, vinegar, spices, and lime juice, cook for 2-3 mins.
  3. Assemble the Bowls Layer rice, meat, beans, and toppings in bowls.

Notes

  • You can customize your burrito bowl with your favorite toppings like salsa, guacamole, or jalapenos.
  • Feel free to substitute ground turkey or chicken for the beef for a lighter option.
