Description

These homemade green tea, lemon, and ginger chews are the perfect balance of refreshing flavors with a hint of spice from ginger! Packed with antioxidants and a zesty punch, they make for a great healthy snack.

Ingredients

Cold Water

  • 3/4 cup

Unflavored Gelatin Powder

  • 5 tablespoons

Strongly Brewed Green Tea

  • 1/2 cup (use 4 tea bags)

Ginger Juice

  • 1/3 cup

Lemon Juice

  • 1/4 cup fresh lemon juice or preservative-free bottled lemon juice

Optional: Honey, to taste

Instructions

  1. Pour cold water into a medium saucepan and sprinkle gelatin powder evenly on top. Let it sit for 5 minutes to bloom.
  2. Brew green tea with 4 tea bags, steeping per package instructions. Remove the bags and ensure you have 1/2 cup of strong tea.
  3. Add the brewed tea, ginger juice, and lemon juice to the bloomed gelatin. Heat on low, stirring until gelatin dissolves. Avoid boiling.
  4. Taste and sweeten with honey if desired, stirring to combine.
  5. Carefully pour the mixture into silicone molds or a lightly greased baking dish.
  6. Refrigerate for 2 hours, or until firm.
  7. Once firm, remove from molds or cut into squares. Store in an airtight container in the fridge for up to a week.

Notes

  • You can use honey to sweeten, but it’s optional for those who prefer a more natural taste.
  • These chews can be stored in an airtight container in the fridge for up to one week.
  • Silicone molds are recommended for easy removal; alternatively, use a greased baking dish and cut into squares.
