These Greek Chicken Bowls are a delicious and healthy meal option that is perfect for a quick and easy dinner. Marinated chicken is paired with fresh vegetables, rice or quinoa, feta cheese, and a tangy tzatziki sauce for a flavorful dish that is sure to become a family favorite.


Ingredients

Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Chicken Bowls:

  • 4 small chicken breasts (about 1 1/4 pounds)
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, and fresh dill)


Instructions

  1. Prepare Marinade: In a bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Marinate Chicken: Pound chicken to uniform thickness and marinate in the prepared marinade for at least 30 minutes.
  3. Make Tzatziki: Mix yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and dill in a separate bowl to prepare the tzatziki sauce.
  4. Cook Rice/Quinoa: Cook rice or quinoa according to package instructions and chop the vegetables.
  5. Cook Chicken: Preheat air fryer to 380°F and cook marinated chicken for about 10 minutes until it reaches an internal temperature of 165°F.
  6. Assemble Bowls: Let the chicken rest before slicing, then assemble bowls with rice/quinoa, veggies, sliced chicken, feta cheese, and tzatziki sauce.
