Ingredients
Potatoes:
- 2 lbs Yukon Gold potatoes
Seasonings:
- 2 tbsp garlic olive oil
- 5 tbsp butter
- 1 cup milk
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/2 tsp dried chives
Instructions
- Prep: Wash and peel the potatoes. Then, dice them into uniform cubes.
- Boil: Add the potatoes to a large pot of cold water with garlic olive oil and bring to a boil. Boil for 15 to 20 minutes until fork-tender. Drain.
- Mash: Place the cooked potatoes back into the pot, add butter, and mash them down with a potato masher.
- Add Milk: Microwave the milk with seasonings, then pour over the mashed potatoes.
- Whip: Use a hand mixer on medium-high speed to whip the potatoes until creamy. Be careful not to overmix. Serve topped with butter.

- For extra flavor, consider adding roasted garlic or herbs.
- Adjust the consistency by adding more milk for creamier potatoes.
