Description

Creamy and flavorful mashed potatoes recipe that is gluten-free, perfect for a comforting side dish.


Ingredients

Potatoes:

  • 2 lbs Yukon Gold potatoes

Seasonings:

  • 2 tbsp garlic olive oil
  • 5 tbsp butter
  • 1 cup milk
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp dried chives


Instructions

  1. Prep: Wash and peel the potatoes. Then, dice them into uniform cubes.
  2. Boil: Add the potatoes to a large pot of cold water with garlic olive oil and bring to a boil. Boil for 15 to 20 minutes until fork-tender. Drain.
  3. Mash: Place the cooked potatoes back into the pot, add butter, and mash them down with a potato masher.
  4. Add Milk: Microwave the milk with seasonings, then pour over the mashed potatoes.
  5. Whip: Use a hand mixer on medium-high speed to whip the potatoes until creamy. Be careful not to overmix. Serve topped with butter.
