Ingredients

Steak Bites

  • 1 – 1 ¼ lb sirloin steak, cut into 1 inch cubes
  • Salt and pepper to taste
  • 1 tablespoon olive oil, divided
  • 2 tablespoons butter, divided
  • 3 large garlic cloves, minced
  • ¼ – ½ teaspoon red pepper flakes (adjust to taste)

Pan-Fried Potatoes

  • 1 lb baby red and yellow potatoes, cut into ½ inch cubes
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste


Instructions

  1. Prepare the skillet and potatoes: Heat a large skillet over medium heat and melt 1 tablespoon of butter with ½ tablespoon of olive oil. Once melted, add the cubed potatoes, minced garlic, chopped fresh parsley, thyme, rosemary, and red pepper flakes. Cook for 5-6 minutes, stirring occasionally, until the potatoes are tender but still firm. Season with salt and pepper. Remove the potatoes from the skillet and set aside on a plate.
  2. Clean and heat the skillet for steak: Discard any burnt bits of garlic and herbs from the skillet. Increase heat to high until the skillet starts to smoke slightly. Add the remaining ½ tablespoon of olive oil and the second tablespoon of butter to the pan.
  3. Sear the steak bites: Add the steak cubes to the hot skillet and let them sear undisturbed for about 1 minute to develop a good crust. Continue cooking, turning as needed, until all sides are browned and the steak reaches your desired doneness, about 4-6 minutes total. Season with salt and pepper to taste.
  4. Combine and finish: Return the cooked potatoes to the skillet with the steak. Stir to combine and cook for an additional minute to reheat the potatoes and meld flavors. Serve immediately.
