Ingredients
Steak Bites
- 1 – 1 ¼ lb sirloin steak, cut into 1 inch cubes
- Salt and pepper to taste
- 1 tablespoon olive oil, divided
- 2 tablespoons butter, divided
- 3 large garlic cloves, minced
- ¼ – ½ teaspoon red pepper flakes (adjust to taste)
Pan-Fried Potatoes
- 1 lb baby red and yellow potatoes, cut into ½ inch cubes
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Prepare the skillet and potatoes: Heat a large skillet over medium heat and melt 1 tablespoon of butter with ½ tablespoon of olive oil. Once melted, add the cubed potatoes, minced garlic, chopped fresh parsley, thyme, rosemary, and red pepper flakes. Cook for 5-6 minutes, stirring occasionally, until the potatoes are tender but still firm. Season with salt and pepper. Remove the potatoes from the skillet and set aside on a plate.
- Clean and heat the skillet for steak: Discard any burnt bits of garlic and herbs from the skillet. Increase heat to high until the skillet starts to smoke slightly. Add the remaining ½ tablespoon of olive oil and the second tablespoon of butter to the pan.
- Sear the steak bites: Add the steak cubes to the hot skillet and let them sear undisturbed for about 1 minute to develop a good crust. Continue cooking, turning as needed, until all sides are browned and the steak reaches your desired doneness, about 4-6 minutes total. Season with salt and pepper to taste.
- Combine and finish: Return the cooked potatoes to the skillet with the steak. Stir to combine and cook for an additional minute to reheat the potatoes and meld flavors. Serve immediately.
Notes
- Use fresh herbs for best flavor; dried herbs may alter the taste profile.
- Adjust red pepper flakes according to your preferred spice level.
- Let steak rest briefly before serving if you prefer juicier bites.
- Use a heavy-bottomed skillet or cast iron for best searing results.
- If the potatoes are not cooked to your liking at step 1, you can parboil them beforehand for faster skillet cooking.
