Description

A classic comfort dish, Funeral Potatoes are a hearty and creamy casserole perfect for gatherings and potlucks. This recipe combines hash browns, creamy soup, sour cream, and cheese topped with a crunchy corn flake crust.


Ingredients

Main Dish:

  • 3/4 cup butter, divided
  • 1 medium onion, diced
  • 2 pounds diced hash browns, thawed and cubed
  • 2 10.75 ounce cans condensed cream of chicken soup
  • 2 cups sour cream
  • 2 cups grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Topping:

  • 3 cups corn flakes cereal, lightly crushed

Instructions

  1. Preheat Oven: Preheat the oven to 350F.
  2. Saute Onions: In a skillet, melt 1 tablespoon of butter and saute the diced onion until soft.
  3. Mix Ingredients: In a large bowl, combine cooked onions, hash browns, melted butter, cream of chicken soup, sour cream, cheddar cheese, salt, and pepper. Transfer to a greased 9×13-inch baking dish.
  4. Prepare Topping: Melt remaining butter in a skillet, add crushed corn flakes, and brown lightly. Spread over the casserole.
  5. Bake: Bake the casserole at 350F for 40-45 minutes. Allow to cool slightly before serving.

Notes

  • You can add cooked, chopped ham or bacon for a meaty variation.
