Description

A delightful and refreshing Fresh Cucumber Caprese Salad that combines the classic Caprese flavors with the added crunch of cucumber. Perfect for a light lunch or as a side dish for a summer meal.


Ingredients

Marinade

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch of salt
  • Pinch of pepper

Salad

  • 1 cucumber, peeled, fork-scored, thinly sliced, then diced
  • 1 1/2 cups cherry tomatoes, quartered
  • 8 oz fresh mozzarella, sliced
  • 1/2 large red onion, chopped
  • Optional: fresh basil leaves

Instructions

  1. Prepare the Marinade: In a small bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Mix well and set aside.
  2. Prepare the Salad: Peel and dice the cucumber. Quarter the cherry tomatoes. Chop the red onion. Slice the mozzarella. Combine all vegetables and mozzarella in a bowl.
  3. Assemble the Salad: Pour the marinade over the salad ingredients. Mix well to coat everything. Let the salad sit for 10 minutes to allow the flavors to meld.
