Description
A comforting and creamy Finnish Salmon Soup, known as ‘Lohikeitto’, that is perfect for a cozy meal. This hearty soup features tender chunks of salmon, vegetables, and a rich broth enhanced with cream and fresh dill.
Ingredients
Vegetables:
- 1 leek (the white and light green part, chopped)
- 2 carrots (chopped)
- 1 large russet potato (chopped)
Salmon:
- 1 lb salmon, cut into cubes (skin off)
Other Ingredients:
- 3 tbsp butter
- 1 tbsp olive oil
- Salt and pepper
- ¾ cup dry white wine
- 1 box (approx 4 cups) fish stock or vegetable stock
- 1 cup heavy cream
- Fresh dill
Instructions
- Prepare Vegetables: Chop the leek, carrots, and potato.
- Saute Vegetables: In a large pot, melt butter with olive oil. Add leek, carrots, and potato. Saute for 5 minutes, season with salt and pepper.
- Add Liquids: Pour in white wine, simmer for 2-3 minutes. Add fish or vegetable stock. Simmer for 10 minutes until potatoes are tender.
- Incorporate Salmon: Cut salmon into cubes, add to the pot. Pour in heavy cream. Cook for 5 minutes until salmon is cooked through.
- Garnish and Serve: Garnish with fresh dill. Serve with lemon wedges and crusty bread.
