Description

Enjoy a delicious and easy saucy ramen noodles dish with a thick and flavorful sauce that can be customized with your favorite veggies, tofu, or mushrooms. This versatile sauce can also be used for stir-fries. Slurp away and savor the flavors!


Ingredients

Noodles

  • 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)

For Sautéing

  • 10 oz extra firm tofu, veggies, or mushrooms of choice sliced

Sauce (see notes)

  • 1 cup water or vegetable broth (see notes)
  • 57 tbsp soy sauce adjust according to desired taste
  • 1.5 tsp dark soy sauce, optional for color
  • 23 tbsp corn starch, see notes
  • 13 tbsp sugar, maple syrup, or other liquid sweetener, adjust according to desired sweetness
  • 2 tbsp rice vinegar, white vinegar, or lemon juice, adjust according to desired sourness
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce or other hot sauce, optional for spice
  • 1 tbsp sesame oil
  • 2 cloves garlic minced (optional)

For Serving

  • Chopped scallions for topping
  • Sesame seeds for topping

Instructions

  1. Mix all the sauce ingredients until well incorporated. Adjust measurements to taste and set aside.
  2. Boil water and cook noodles until chewy. Drain and set aside.
  3. Sauté veggies or tofu in a pan.
  4. Pour in sauce and simmer until thickened.
  5. Add noodles to the pan and coat in sauce. Cook until sauce thickens.
  6. Season to taste and garnish with sesame seeds and spring onions. Enjoy!

Notes

  • Sauce: Double the recipe for more veggies.
  • Soy sauce: Adjust if using vegetable broth.
  • Corn starch: Start with 2 tbsp and adjust for thickness.
