Description

This Easy Creamy White Chicken Chili is a comforting and flavorful twist on traditional chili. Loaded with tender chicken, creamy beans, and a touch of spice, it’s perfect for a cozy night in.


Ingredients

For the Chili:

  • 1 Tablespoon olive oil
  • 1 Tablespoon unsalted butter
  • 1 1/2 cups finely chopped onion (1 medium onion)
  • 1 jalapeño pepper, seeded and finely chopped
  • 3 cloves garlic, minced
  • 1 ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ¼ teaspoon paprika
  • 1 (4-ounce) can diced green chiles, mild or medium
  • 3 cups (12 ounces) rotisserie chicken, shredded
  • 2 (15-ounce) cans Cannellini Beans, rinsed and drained
  • 3 cups (24 ounces) low-sodium chicken broth
  • 1 Tablespoon Cornstarch mixed with 2 Tablespoons water for thickening
  • ½ cup (4 ounces) sour cream
  • ¼ cup (2 ounces) heavy cream
  • Salt and black pepper to taste


Instructions

  1. Heat the olive oil and butter: In a Dutch oven, heat olive oil and butter over medium heat.
  2. Cook onion and spices: Add onion, jalapeño, garlic, cumin, oregano, and paprika. Cook until softened and fragrant.
  3. Add remaining ingredients: Stir in green chiles, chicken, beans, and broth. Simmer to develop flavors.
  4. Thicken the chili: Whisk cornstarch mixture, sour cream, and heavy cream. Add to the chili and simmer until thickened.
  5. Season and serve: Season with salt and pepper. Garnish with cheese, scallions, and sour cream before serving.
