Description
Enjoy thinly sliced cucumbers tossed in a delicious tangy and savory dressing for this easy Asian cucumber salad. A great choice for an appetizer or as a side dish!
Ingredients
Cucumbers:
- 5 Persian cucumbers
Dressing:
- 1/2 tsp salt
- 1/2 tbsp sesame oil
- 3/4 tbsp light soy sauce
- 1/2–1 tbsp sugar (adjust to taste)
- 3/4 tbsp rice vinegar
- 1 tbsp chili oil
- 1/2 tbsp sesame seeds
- 1/2 tbsp garlic, minced (optional)
Instructions
- Rinse and slice cucumbers: Rinse and slice one end of the cucumber at an angle. Continue slicing at an angle to desired thickness.
- Salt cucumbers: Add sliced cucumbers to a bowl, sprinkle with 1/2 tsp salt, mix well, and refrigerate for at least 20 minutes.
- Drain and rinse cucumbers: Drain the water, rinse cucumbers for 10 seconds, and return to the bowl.
- Prepare dressing: In the same bowl, add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic. Stir well to combine.
- Serve: Serve and enjoy!
Notes
- Sugar: Start with 1/2 tbsp and adjust to taste.
- Garlic: Optional but recommended.
- Chili oil: Adjust to preferred heat level.
- Best served immediately.
