Description

Enjoy thinly sliced cucumbers tossed in a delicious tangy and savory dressing for this easy Asian cucumber salad. A great choice for an appetizer or as a side dish!


Ingredients

Cucumbers:

  • 5 Persian cucumbers

Dressing:

  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (adjust to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic, minced (optional)

Instructions

  1. Rinse and slice cucumbers: Rinse and slice one end of the cucumber at an angle. Continue slicing at an angle to desired thickness.
  2. Salt cucumbers: Add sliced cucumbers to a bowl, sprinkle with 1/2 tsp salt, mix well, and refrigerate for at least 20 minutes.
  3. Drain and rinse cucumbers: Drain the water, rinse cucumbers for 10 seconds, and return to the bowl.
  4. Prepare dressing: In the same bowl, add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic. Stir well to combine.
  5. Serve: Serve and enjoy!

Notes

  • Sugar: Start with 1/2 tbsp and adjust to taste.
  • Garlic: Optional but recommended.
  • Chili oil: Adjust to preferred heat level.
