Dorito Casserole is a cheesy, beefy, and crunchy layered dish that combines ground beef, beans, veggies, and cheesy nacho-flavored Doritos baked to perfection. It’s perfect for parties, potlucks, or a fun, casual weeknight dinner that offers a delightful mix of textures and bold flavors.

- 1 lb lean ground beef, or any ground meat of your choice
- ½ cup chopped yellow onion
- 1 (15 oz) can black beans, drained
- 1 (14.5 oz) can fire roasted diced tomatoes, drained
- 1 (10.75 oz) can Fiesta Nacho Cheese Soup
- 1 cup corn, fresh, frozen, or canned (drain it!)
- 1 (4 oz) can diced green chiles
- ½ cup chopped red bell pepper
- ½ cup chopped green bell pepper
- 1 oz taco seasoning packet, hot or mild
- 9 ¼ oz bag of Nacho Cheese Doritos, crushed
- 3 cups shredded cheddar cheese
Optional Toppings
- 1 cup chopped tomatoes, or Pico de Gallo
- ½ cup sour cream
- ½ cup guacamole
- 3 tablespoons freshly chopped cilantro
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with non-stick spray to prepare it for layering.
- Cook Ground Beef and Onions: In a large skillet over medium heat, add the ground beef and chopped yellow onion. Cook for 7 to 10 minutes until the meat is no longer pink and the juices run clear. Drain any excess grease to avoid sogginess in the casserole.
- Add Remaining Ingredients to Skillet: Stir in the drained black beans, fire-roasted diced tomatoes, Fiesta Nacho Cheese Soup, corn, diced green chiles, red and green bell peppers, and taco seasoning. Continue cooking and stirring frequently for 3 minutes to combine flavors well. Remove from heat.
- Layer the Casserole: In the prepared casserole dish, start by spreading half of the crushed Doritos evenly on the bottom. Add half of the meat and vegetable mixture over the Doritos. Then sprinkle half of the shredded cheddar cheese on top. Repeat these layers again, finishing with a layer of cheese on top.
- Bake: Place the casserole in the preheated oven and bake for 15 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes. This helps it set and cool slightly for easier serving. Add your favorite optional toppings such as chopped tomatoes, sour cream, guacamole, or fresh cilantro before serving immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Note that the Doritos will soften over time.
- To reheat individual portions, microwave in 30-second intervals until warm.
- To reheat the whole casserole, cover it with foil and bake in a 350°F oven for 15–20 minutes until heated through.
- Add freshly crushed Doritos on top after reheating to restore crunchiness to your casserole.
