Ingredients
Steak
- 3–4 filet mignon steaks
- 3–4 thin slices turkey pastrami
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1 tbsp garlic powder
- Canola oil, as needed
Shrimp
- 1 lb shrimp, peeled and deveined
- 2 tbsp Cowboy Candy seasoning
- 2 tbsp clarified butter
Diablo Sauce
- 1 cup unsalted butter
- 1/2 cup chipotle in adobo puree
- 2 tbsp minced garlic
- 1 tbsp chopped cilantro
- 1 tbsp minced jalapeños
- 1 tsp cayenne powder
- 1 tsp black pepper
- 1 tsp kosher salt
Instructions
- Prepare the steaks: Wrap each filet mignon with one slice of turkey pastrami and secure it with a toothpick or grilling pin to hold the pastrami in place.
- Season and dry brine: Lightly coat the wrapped steaks with canola oil, then generously season all sides with kosher salt, black pepper, and garlic powder. Place in the refrigerator for 40 minutes to dry brine, then remove 15 minutes before cooking to come to room temperature.
- Preheat the grill: Heat your grill to medium-high heat, approximately 375°F, for direct cooking of the steaks.
- Grill the steaks: Place the steaks on the grill and cook for 3 to 3.5 minutes per side until nicely seared and the internal temperature reaches about 120°F for medium-rare doneness.
- Rest the steaks: Remove the steaks from the grill and let them rest for 10 minutes to allow juices to redistribute.
- Cook the shrimp: Place a skillet on the grill over medium heat (around 325°F) and add the clarified butter. Season shrimp with Cowboy Candy seasoning and cook in the skillet for 2 to 3 minutes until shrimp turn opaque and curl up. Remove shrimp and rest briefly.
- Prepare the Diablo sauce: In a separate skillet, combine unsalted butter, chipotle in adobo puree, minced garlic, chopped cilantro, minced jalapeños, cayenne powder, black pepper, and kosher salt. Heat gently until butter melts and the sauce bubbles lightly, blending all flavors together.
- Assemble and serve: Slice the rested steaks, top with the cooked shrimp, and spoon the hot Diablo sauce generously over everything. Serve immediately for a dramatic and flavorful meal.
