Ingredients
Egg Mixture:
- 4 large eggs
- 1/2 cup sugar
- 1/4 cup cornstarch
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
Pudding:
- 3 cups whole milk
- 1/2 cup sugar
- 1 teaspoon banana extract
- 1 teaspoon banana flavoring
Additional:
- 2 cups crushed vanilla wafer cookies
- 1 cup caramel sauce
- 3 medium bananas, sliced
- Whipped cream for topping
Instructions
- Egg Mixture: In a bowl, combine 1/2 cup sugar, flour, cornstarch, and salt. Mix well.
- Pudding: Separate 3 eggs; reserve whites. Add whole egg to yolks and mix with sugar mixture. Stir in 1/2 cup milk. Warm remaining milk in a saucepan; whisk in egg mixture. Cook until thick.
- Remove from heat; add banana flavoring. Stir and set aside.
- Peel and slice bananas. In jars, layer cookies, pudding, bananas, and caramel. Repeat layers.
- Chill in the fridge. Top with whipped cream before serving.
Notes
- You can serve these parfaits warm if preferred.
