Description

Ingredients

Ground Beef Mixture:

  • 1 Pound ground beef
  • 1 Teaspoon chili powder
  • 1 Teaspoon smoked paprika
  • 1 Teaspoon garlic powder
  • 1 Teaspoon dried oregano
  • 1 Teaspoon ground cumin
  • 1 Teaspoon onion powder
  • 2 Tablespoons olive oil
  • Salt and black pepper (to taste)

Wraps:

  • 4 flour tortillas
  • ½ Cup lettuce (shredded)
  • ¾ Cup cherry tomatoes (halved)
  • ⅓ Cup ranch dressing
  • 1 small red onion (sliced)
  • 4 Tablespoons corn (well drained if canned or thawed)
  • 1 Cup cheddar cheese (shredded)

Instructions

  1. Mix: In a medium bowl, combine ground beef and all spices.
  2. Brown: Heat a non-stick skillet with oil over medium-high heat. Cook the beef until browned. Set aside.
  3. Cut: Lay a tortilla on a cutting board. Make a cut from the center to the bottom edge.
  4. Add: Place lettuce and cherry tomatoes on the left quarter. Spread ranch dressing on the top left, then add onion and corn.
  5. Add: On the top right quarter, layer cheese and then the ground beef.
  6. Sprinkle: Sprinkle additional cheese on the bottom right.
  7. Fold: Fold the tortilla clockwise from bottom left to top left, then to top right, and finally to bottom right. Repeat for all tortillas.
  8. Cook: Grill the folded wraps in a non-stick pan over medium heat or in beef fat, about 2 to 3 minutes per side.
