Ingredients
Ground Beef Mixture:
- 1 Pound ground beef
- 1 Teaspoon chili powder
- 1 Teaspoon smoked paprika
- 1 Teaspoon garlic powder
- 1 Teaspoon dried oregano
- 1 Teaspoon ground cumin
- 1 Teaspoon onion powder
- 2 Tablespoons olive oil
- Salt and black pepper (to taste)
Wraps:
- 4 flour tortillas
- ½ Cup lettuce (shredded)
- ¾ Cup cherry tomatoes (halved)
- ⅓ Cup ranch dressing
- 1 small red onion (sliced)
- 4 Tablespoons corn (well drained if canned or thawed)
- 1 Cup cheddar cheese (shredded)
Instructions
- Mix: In a medium bowl, combine ground beef and all spices.
- Brown: Heat a non-stick skillet with oil over medium-high heat. Cook the beef until browned. Set aside.
- Cut: Lay a tortilla on a cutting board. Make a cut from the center to the bottom edge.
- Add: Place lettuce and cherry tomatoes on the left quarter. Spread ranch dressing on the top left, then add onion and corn.
- Add: On the top right quarter, layer cheese and then the ground beef.
- Sprinkle: Sprinkle additional cheese on the bottom right.
- Fold: Fold the tortilla clockwise from bottom left to top left, then to top right, and finally to bottom right. Repeat for all tortillas.
- Cook: Grill the folded wraps in a non-stick pan over medium heat or in beef fat, about 2 to 3 minutes per side.
