Ingredients

Orzo:

  • 8 ounces uncooked orzo

Mushrooms:

  • 3 tablespoons butter, divided
  • 1 pound mixed mushrooms, sliced (half baby bella, half shiitake)

Sauce:

  • 1 large shallot, minced
  • 5 large garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup heavy cream
  • fine sea salt and freshly-ground black pepper, to taste

Additional:

  • 1 ounce freshly-grated Parmesan cheese
  • 2 handfuls fresh baby spinach
  • 1/2 cup loosely-packed chopped fresh basil
  • zest and juice of 1 small lemon (optional)


Instructions

  1. Heat the water for the orzo: Bring a large saucepan of salted water to a boil.
  2. Brown the mushrooms: Sauté mushrooms in butter until browned; set aside.
  3. Cook the orzo: Boil orzo until slightly undercooked.
  4. Sauté the veggies: Cook shallot, garlic, and red pepper flakes in butter.
  5. Combine: Add cooked mushrooms, heavy cream, salt, and pepper to the pan with orzo.
  6. Finish: Stir in Parmesan, spinach, basil, lemon zest, and juice; adjust seasoning.
  7. Serve: Garnish with Parmesan and enjoy!
