Ingredients
Main Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 yellow onion, finely diced
- 3 garlic cloves, minced
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 1 pound ground beef
- Salt and pepper to taste
Sauce:
- 3 tablespoons tomato paste
- ½ cup red wine
- ½ cup beef broth (more as needed)
- 1 ¼ cup tomato passata
- 1 large bay leaf
Additional:
- 12 ounces fettuccine (can be gluten-free)
- ¼ cup pasta water
- ⅓ cup heavy cream
- ⅛ teaspoon ground nutmeg (more to taste)
- Grated parmesan and fresh basil leaves for garnish
Instructions
- Preheat and Sauté: Heat olive oil in a large pan. Sauté onion, garlic, carrot, and celery.
- Brown Beef: Add ground beef, brown, and season with salt, pepper. Stir in tomato paste.
- Add Sauces: Pour in red wine, beef broth, tomato passata, and bay leaf. Simmer covered for 20 minutes.
- Cook Pasta: Cook fettuccine until al dente; reserve pasta water.
- Finish Sauce: Remove bay leaf. Stir in pasta water, cream, nutmeg. Adjust seasoning.
- Combine and Garnish: Toss pasta in sauce. Garnish with parmesan and basil. Serve and enjoy!
