  • 2 chicken breasts, diced into bite-sized pieces
  • 1 medium onion, sliced or chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste / puree
  • 1 teaspoon paprika
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Finishing Touches:

  • 2 cups (60g) fresh spinach leaves
  • 1 cup (240ml) heavy cream (double cream)
  • 1/2 cup (45g) grated parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, drain, and set aside.
  2. Sear Chorizo and Chicken: In a skillet, cook chorizo until browned, then add chicken and cook until sealed.
  3. Add Ingredients: Add garlic, onion, tomato paste, spices, salt, and pepper. Stir in spinach until wilted.
  4. Create the Sauce: Pour in pasta water, cream, and parmesan. Simmer gently.
