Description

Enjoy this traditional Irish dish of Colcannon, creamy mashed potatoes mixed with sautéed cabbage or kale, and onions, flavored with butter and nutmeg. A comforting and flavorful side dish perfect for any meal.


Ingredients

Potatoes:

  • 2 pounds yukon gold potatoes (peeled and cut into chunks)

Sautéed Vegetables:

  • 6 tablespoons butter (unsalted)
  • 1 small onion (chopped)
  • 2 cups cabbage (or kale, thinly sliced)

Additional:

  • 1/2 cup whole milk
  • 1/4 teaspoon nutmeg
  • Salt and pepper (to taste)
  • Fresh scallions or chives (chopped for garnish)

Instructions

  1. Cook Potatoes: Place the potato chunks in a large pot, cover with cold water, and boil until fork-tender, about 15-20 minutes.
  2. Sauté Vegetables: In a skillet, melt 2 tablespoons of butter, sauté onions until translucent, then add cabbage or kale and cook until tender, about 5-7 minutes. Set aside.
  3. Mash Potatoes: Drain cooked potatoes, return to pot, add remaining butter and milk. Mash until smooth, adding more milk if needed.
  4. Combine: Stir in sautéed vegetables, nutmeg, salt, and pepper. Mix well.
  5. Serve: Transfer to a serving dish, garnish with chives or green onions. Serve hot.
