Ingredients
Potatoes:
- 2 pounds yukon gold potatoes (peeled and cut into chunks)
Sautéed Vegetables:
- 6 tablespoons butter (unsalted)
- 1 small onion (chopped)
- 2 cups cabbage (or kale, thinly sliced)
Additional:
- 1/2 cup whole milk
- 1/4 teaspoon nutmeg
- Salt and pepper (to taste)
- Fresh scallions or chives (chopped for garnish)
Instructions
- Cook Potatoes: Place the potato chunks in a large pot, cover with cold water, and boil until fork-tender, about 15-20 minutes.
- Sauté Vegetables: In a skillet, melt 2 tablespoons of butter, sauté onions until translucent, then add cabbage or kale and cook until tender, about 5-7 minutes. Set aside.
- Mash Potatoes: Drain cooked potatoes, return to pot, add remaining butter and milk. Mash until smooth, adding more milk if needed.
- Combine: Stir in sautéed vegetables, nutmeg, salt, and pepper. Mix well.
- Serve: Transfer to a serving dish, garnish with chives or green onions. Serve hot.
