Description

This classic waffle recipe features a perfect balance of crispy exteriors and fluffy interiors, making it an ideal breakfast or brunch dish. Easy to prepare, the batter can be made ahead of time to enhance the texture and flavor. Top with syrup, fruit, or whipped cream for a delicious treat.

Ingredients

2 1/4 cups plain (all-purpose) flour

2 1/2 tablespoons caster (superfine) sugar

Pinch of salt

4 teaspoons baking powder

1 1/3 cups full-fat milk, slightly warmed

1/2 teaspoon vanilla extract

4 large eggs, at room temperature

150g (11 tablespoons) unsalted butter, melted and slightly cooled

Instructions

  • Whisk Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until well blended.

  • Add Wet Ingredients: Add the warm milk, eggs, and vanilla extract to the dry ingredients. Whisk until smooth and lump-free.

  • Incorporate Butter: Gradually add the melted butter, whisking continuously until fully combined.

  • Rest the Batter: Cover and refrigerate the batter for at least 2 hours (or overnight) to allow the flour to absorb the liquid for a softer texture.

  • Preheat Waffle Maker: Preheat the waffle iron according to the manufacturer’s instructions.

  • Cook Waffles: Pour the batter into the preheated waffle iron. Cook until golden brown and crisp, around 3.5 to 6 minutes per batch.

  • Serve Immediately: Serve hot with your favorite toppings.

Notes

If you’re in a rush, you can skip the overnight rest, but the waffles may be slightly less fluffy.

For extra crispiness, ensure your waffle iron is thoroughly preheated.

You can store leftovers in an airtight container at room temperature for up to 2 days or freeze them for up to 3 months.
