Ingredients
Cookies:
- 2 and 1/4 cups (281g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1/4 or 1/2 teaspoon almond extract (optional)
Icing:
- 3 cups (360g) confectioners’ sugar
- 1/2 teaspoon pure vanilla extract
- 2 teaspoons light corn syrup
- 4.5–5 Tablespoons (67–75ml) water
- Pinch of salt
- Gel food coloring & sprinkles (optional)
Instructions
- Make the cookie dough: Whisk dry ingredients. Cream butter and sugar, add egg and extracts. Mix in dry ingredients. Divide and chill dough.
- Roll out and cut dough: Roll dough, cut shapes, and chill again. Bake until browned.
- Make the icing: Mix sugar, vanilla, corn syrup, water, and salt until smooth. Adjust consistency if needed. Tint with food coloring if desired.
- Decorate the cookies: Use icing to decorate cookies as desired. Add sprinkles if preferred.
- Let icing dry/set: Allow cookies to dry for 24 hours for icing to set completely.
Notes
- For best results, chill the cookie dough before rolling and cutting for easier handling.
- Adjust the icing consistency by adding more water for a thinner icing or more sugar for a thicker icing.
- Store decorated cookies in a single layer to prevent smudging the icing.
