Ingredients

Cookies:

  • 2 and 1/4 cups (281g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (12 Tbsp; 170g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1/4 or 1/2 teaspoon almond extract (optional)

Icing:

  • 3 cups (360g) confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • 2 teaspoons light corn syrup
  • 4.55 Tablespoons (67–75ml) water
  • Pinch of salt
  • Gel food coloring & sprinkles (optional)

Instructions

  1. Make the cookie dough: Whisk dry ingredients. Cream butter and sugar, add egg and extracts. Mix in dry ingredients. Divide and chill dough.
  2. Roll out and cut dough: Roll dough, cut shapes, and chill again. Bake until browned.
  3. Make the icing: Mix sugar, vanilla, corn syrup, water, and salt until smooth. Adjust consistency if needed. Tint with food coloring if desired.
  4. Decorate the cookies: Use icing to decorate cookies as desired. Add sprinkles if preferred.
  5. Let icing dry/set: Allow cookies to dry for 24 hours for icing to set completely.

Notes

  • For best results, chill the cookie dough before rolling and cutting for easier handling.
  • Adjust the icing consistency by adding more water for a thinner icing or more sugar for a thicker icing.
  • Store decorated cookies in a single layer to prevent smudging the icing.
