Description

Ingredients

For the fudge icing:

  • 450 g dark chocolate
  • 350 ml double cream
  • 200 g unsalted butter
  • 150 g icing sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Making the cake layers:

  • 70 g cocoa powder
  • 1 teaspoon instant coffee
  • 120 ml hot water
  • 180 g unsalted butter, softened
  • 150 ml vegetable oil
  • 180 g granulated sugar
  • 180 g soft light brown sugar
  • 6 eggs
  • 200 ml buttermilk
  • 300 g plain flour
  • 1.5 teaspoons baking soda
  • 1 tablespoon white vinegar


Instructions

  1. Making the fudge icing: In a pan, combine all fudge icing ingredients over medium heat, stirring until smooth. Strain to remove lumps and set aside to cool and thicken.
  2. Making the cake layers: Preheat oven. Mix cocoa, coffee, and water. Beat in butter, oil, sugars. Add eggs, buttermilk, flour. Combine baking soda and vinegar separately, then mix into batter. Bake in cake tins.
  3. Assembling the cake: Once icing is set and cakes are cooled, layer cakes with icing in between. Decorate as desired.
