Ingredients
- 1 cup natural peanut butter (creamy, no sugar added)
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (optional)
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a mixing bowl, combine the peanut butter, coconut flour, maple syrup, vanilla extract, and salt. Stir until a dough forms.
- Use your hands to shape the dough into small egg shapes and place them on a parchment-lined baking sheet.
- Freeze the peanut butter eggs for 30 minutes or until firm.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
- Dip each frozen peanut butter egg into the melted chocolate, coating completely. Return them to the parchment-lined sheet.
- Refrigerate the chocolate-coated eggs for 10-15 minutes until the chocolate is set.
- Store the finished peanut butter eggs in an airtight container in the fridge or freezer.
