- ¼ cup (20 grams) cocoa powder
- 2 teaspoons (2 grams) espresso powder
- 1¼ teaspoons (5 grams) baking powder
- ½ teaspoon (4 grams) baking soda
- ¾ teaspoon (3 grams) kosher salt
- 1 cup (242 grams) whole milk
- 12 tablespoons (168 grams) unsalted butter, melted
- 1 large egg + 1 large yolk, lightly beaten
- 2 teaspoons pure vanilla extract
Instructions
- Filling and Streusel: Heat oven to 350ºF (177ºC). Grease a 9-inch round cake pan and line the bottom with parchment paper. Mix brown sugar, cinnamon, and salt. Reserve ¼ cup of the mixture. Add flour, cocoa, espresso to remaining mixture. Add butter and mix until clumps form. Set aside.
- Cake: Whisk flour, sugar, cocoa, espresso, baking powder, baking soda, and salt. Stir in milk, melted butter, eggs, and vanilla. Pour 2¼ cups batter into pan. Sprinkle reserved mixture, add remaining batter, crumble streusel, sprinkle chocolate. Bake 42–45 mins. Cool and serve.
