Ingredients
Chicken:
- 1.4 lb chicken thighs, boneless, skinless
- ½ teaspoon chili powder or more
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Peaches:
- 2 yellow peaches, medium size, thoroughly washed, cored, and sliced
- 3 tablespoons honey or more
- ½ lemon, freshly squeezed or more
- 2 tablespoons butter
Instructions
- How to cook chicken: Season chicken thighs with chili powder, Italian seasoning, salt, and pepper. Heat a cast-iron skillet over medium heat. Add olive oil and cook chicken for 5 minutes on each side. Remove from skillet.
- How to cook peaches: In the same skillet, cook sliced peaches for about 5 minutes. Add honey, lemon juice, and butter. Stir.
- Assembly: Place cooked chicken among peaches in the skillet. Reheat briefly. Top with fresh thyme.
