Ingredients
For the Chicken
- 2 pounds boneless, skinless chicken breasts
- Salt, to taste
- Freshly ground black pepper, to taste
- ¼ cup olive oil
- ¼ cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
- 2 tablespoons lemon juice
- 1 cup Italian seasoned breadcrumbs
For the Garlic Butter Sauce
- ½ cup butter (1 stick)
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Prepare the Chicken: Cut the chicken breasts into 1-inch pieces. Season them with salt and freshly ground black pepper according to your taste preferences.
- Marinate the Chicken: In a medium glass bowl, whisk together the olive oil, dry white wine, and lemon juice. Add the chicken pieces to the marinade, cover with plastic wrap or lid, and refrigerate for at least 1 hour and up to 12 hours to allow flavors to develop.
- Bread the Chicken: When ready to cook, remove the chicken from the marinade using tongs and place on a plate. Pour the Italian seasoned breadcrumbs into a shallow bowl. Coat each chicken piece thoroughly in the breadcrumbs.
- Skewer the Chicken: Thread 4 to 5 breadcrumb-coated chicken pieces onto each skewer, making sure they are evenly spaced.
- Grill the Chicken: Lightly spray a grill or grill pan with cooking spray and preheat to medium-high heat. Place the chicken skewers on the grill and cook for 4 to 5 minutes per side, until the chicken is golden brown and fully cooked (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes.
- Make the Garlic Butter Sauce: In a small saucepan, melt the butter over medium-high heat. Add minced garlic and sauté for 2 to 3 minutes, stirring frequently until fragrant but not browned. Remove the pan from heat and stir in lemon juice and finely chopped parsley.
- Serve: Drizzle the warm garlic butter sauce over the grilled chicken spiedini and serve immediately with your choice of sides.
Notes
- For an easy marinating alternative, use a gallon-size resealable plastic bag instead of a bowl.
