Description

A quick and easy recipe for Chicken Fried Rice that is perfect for a weeknight dinner.


Ingredients

For Chicken Fried Rice:

  • 3 cups cooked white rice, preferably day-old
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat Skillet: Heat a large skillet or wok over medium-high heat with 1 tablespoon of vegetable oil. Sauté minced garlic until fragrant.
  2. Cook Vegetables: Add mixed vegetables to the skillet and stir-fry until tender. Push vegetables to one side.
  3. Scramble Eggs: Pour beaten eggs into the skillet, scramble until cooked, then mix with vegetables.
  4. Add Rice: Add cooked rice to the skillet, breaking up clumps, and cook for 2-3 minutes.
  5. Season: Pour soy sauce and sesame oil over the rice, add diced chicken, cook until heated through.
  6. Finish: Stir in green onions, season with salt and pepper, then serve hot.

Notes

  • For a vegetarian version, replace chicken with tofu and use vegetable broth.
  • Add sriracha or chili sauce for a spicy kick.
