Description

A delectable Chicken Chow Mein recipe that combines tender chicken, fresh vegetables, and savory chow mein sauce over a bed of egg noodles. This quick and easy dish is bursting with Chinese flavors and can be whipped up in under 30 minutes!


Ingredients

For the Chicken Chow Mein:

  • 300 grams Dried egg noodles or 2 servings noodles
  • 250 grams Chicken breast, boneless
  • 1 Onion, thinly sliced
  • 23 cloves Garlic, finely chopped
  • 23 Spring onions, cut into 2-inch pieces
  • 1 Bell pepper, red or green, thinly sliced
  • 1 Carrot, julienned
  • 23 Cabbage leaves, thinly sliced
  • 23 tbsp Cooking oil, neutral flavor

For the Chow Mein Sauce:

  • 2 tbsp Light soy sauce
  • 2 tsp Dark soy sauce
  • 4 tbsp Oyster sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Brown sugar
  • 1 tbsp Water
  • 1/4 tsp White pepper

For the Chicken Marinade:

  • 1 tbsp Light soy sauce
  • 1 tbsp Cornstarch
  • 1/4 tsp Baking soda
  • 1 tsp Brown sugar
  • 1/4 tsp White pepper
  • 2 tsp Sesame oil

Instructions

  1. Marinate the Chicken: Slice chicken thinly and marinate with soy sauce, cornstarch, baking soda, white pepper, sugar, and sesame oil. Set aside.
  2. Prepare Ingredients: Cut all vegetables and boil noodles according to package instructions. Rinse and set aside.
  3. Mix Chow Mein Sauce: Combine all sauce ingredients in a bowl and set aside.
  4. Stir-Fry Chicken: Cook marinated chicken in a hot wok, then set aside.
  5. Stir-Fry Vegetables and Noodles: Saute garlic, onions, and vegetables. Add noodles, sauce, and cooked chicken. Toss well.
  6. Finish: Garnish with spring onions and serve hot.

Notes

  • You may not need to add extra salt due to the soy and oyster sauces.
  • To reduce saltiness, adjust soy sauce amounts or opt for low-sodium versions.
  • Substitute oyster sauce with hoisin sauce, vegetarian stir-fry sauce, MSG, or chicken bouillon powder.
