Description

This warm and creamy shrimp casserole recipe is the perfect comfort food for dinner! It’s a one pot dish full of shrimp, noodles, and mushrooms in a cheesy Velveeta sauce. Yum!


Ingredients

Whole Wheat Pasta:

1 pound

Olive Oil:

1-2 tablespoons

Garlic:

3 cloves, pressed

Shrimp:

2 pounds

Velveeta:

1 pound

Salsa:

12-16 ounces

Mushrooms:

16 ounces


Instructions

  1. Preheat oven: Preheat oven to 350°F.
  2. Cook Pasta: Prepare pasta according to package directions, then drain.
  3. Saute Shrimp: In a pan, sauté shrimp and garlic in olive oil until shrimp is just pink.
  4. Prepare Cheese Sauce: Cube Velveeta, place in a microwave-safe bowl, add salsa, microwave and stir until melted.
  5. Combine Ingredients: In an oven-safe bowl, combine pasta, shrimp, cheese mixture, and mushrooms. Toss to coat.
  6. Bake: Sprinkle Parmesan cheese on top, then bake for 45-60 minutes until browned and crunchy.
