These Carrot Cake Energy Balls are a healthy, no-bake snack made with wholesome ingredients like oats, dates, carrots, and warm spices. They’re perfect for meal prep and packed with flavor reminiscent of classic carrot cake.
Ingredients
- 1 cup rolled oats
- 1 cup medjool dates, pitted
- 1/2 cup shredded carrots
- 1/2 cup walnuts
- 1/4 cup shredded coconut
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Add oats, dates, carrots, walnuts, coconut, cinnamon, nutmeg, ginger, vanilla extract, and salt to a food processor.
- Blend until the mixture sticks together and forms a dough-like consistency.
- Scoop out about 1 tablespoon of the mixture and roll into a ball using your hands.
- Repeat with the remaining mixture.
- Store the energy balls in the fridge in an airtight container for up to one week.
Notes
- If your dates are dry, soak them in warm water for 5-10 minutes to soften.
- You can substitute walnuts with pecans or almonds if desired.
- These can also be frozen for longer storage.
