Description

These Carrot Cake Energy Balls are a healthy, no-bake snack made with wholesome ingredients like oats, dates, carrots, and warm spices. They’re perfect for meal prep and packed with flavor reminiscent of classic carrot cake.


Ingredients

  • 1 cup rolled oats
  • 1 cup medjool dates, pitted
  • 1/2 cup shredded carrots
  • 1/2 cup walnuts
  • 1/4 cup shredded coconut
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Add oats, dates, carrots, walnuts, coconut, cinnamon, nutmeg, ginger, vanilla extract, and salt to a food processor.
  2. Blend until the mixture sticks together and forms a dough-like consistency.
  3. Scoop out about 1 tablespoon of the mixture and roll into a ball using your hands.
  4. Repeat with the remaining mixture.
  5. Store the energy balls in the fridge in an airtight container for up to one week.

Notes

  • If your dates are dry, soak them in warm water for 5-10 minutes to soften.
  • You can substitute walnuts with pecans or almonds if desired.
