Ingredients
Caramelized Onions:
- 1 tbsp olive oil
- 4 sweet onions, diced
Dip Base:
- 1 cup thick vegan yogurt (Icelandic Provisions Oatmilk Skyr recommended)
- 1 cup cashews, soaked overnight
- ½ lemon, juiced
- 1 clove garlic
- Salt and pepper, to taste
- 1 bunch chives, diced
Instructions
- Caramelize Onions: Heat olive oil in a skillet, add diced onions, cook until deeply caramelized, about 25–30 minutes. Set aside.
- Prepare Dip Base: Blend soaked cashews, vegan yogurt, lemon juice, garlic, salt, and pepper until smooth.
- Combine Ingredients: Transfer base to a bowl, fold in caramelized onions, add diced chives, and mix well.
- Serve: Enjoy immediately or refrigerate for a few hours to enhance flavors.
