This Cajun Sausage and Rice Skillet is a quick and flavorful one-pan meal featuring smoked sausage, bell peppers, and Cajun seasoning, perfect for busy weeknights.


Ingredients

Smoked Sausage:

12 oz Andouille or Kielbasa, sliced into ½-inch rounds

Rice:

1 cup long-grain white rice, rinsed

Bell Peppers:

1 red, diced; 1 green, diced

Onion:

1 medium yellow or white, diced

Garlic:

3 cloves, minced

Chicken Broth:

1 ½ cups

Cajun Seasoning:

2 tbsp store-bought or homemade

Olive Oil:

1 tbsp

Salt and Pepper:

to taste

Fresh Parsley:

optional, for garnish

Green Onions:

optional, for garnish

Hot Sauce:

optional, for serving


Instructions

  1. Prepare the Ingredients Slice the sausage, dice bell peppers and onion, mince garlic, rinse rice.
  2. Cook the Sausage Brown sausage in a skillet, set aside.
  3. Sauté the Veggies Cook onion, bell peppers, and garlic.
  4. Toast the Rice Toast rice with veggies in oil.
  5. Cook the Rice Add broth and Cajun seasoning, simmer until rice is tender.
  6. Combine and Finish Add sausage back, cook to meld flavors.
  7. Serve Garnish with parsley, green onions, and hot sauce.
