Ingredients
Mint Chutney:
- 1 cup mint
- 1 cup cilantro
- 1 large clove garlic
- 1 inch piece ginger
- 1 serrano chile (use half for less heat)
- 1/2 tsp kosher salt, plus more to taste
- 1/2 cup water
Pizza Dough:
- 1 3/4 cup warm water
- 1 tsp granulated sugar
- 2 1/4 tsp active dry yeast
- 2 tbsp olive oil
- 1 1/2 tsp salt
- 4 to 5 cups all-purpose flour
- vegetable oil (for bowl)
Toppings:
- approximately 2 cups leftover butter chicken (shredded)
- 3 cups shredded mozzarella cheese
- thinly sliced bell pepper
- diced pineapple
- sliced red onion or shallot
- chopped cilantro (for garnish, optional)
Instructions
- Mint Chutney: Combine all ingredients in a blender or food processor and process until smooth.
- Pizza Dough: Combine warm water, sugar, and yeast in the bowl of a stand mixer. Add oil, salt, and flour gradually until a smooth dough forms. Let rise for 1 1/2 hours.
- Toppings: Prepare all toppings while dough rises. Roll out dough, add toppings, and bake at 450ºF for 10-15 minutes until golden and bubbly. Top with cilantro before serving.
