Ingredients
For the Orzo Bake:
- 1 tablespoon extra virgin olive oil
- 1 pint cherry tomatoes
- 2 cloves garlic, peeled
- 1 5.3 ounce Boursin garlic and herb cheese
- 12 ounces orzo pasta (about 2 cups)
- 3 cups vegetable or chicken broth
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach leaves, roughly torn
- 1/4 cup fresh basil leaves, sliced thin

Instructions
- Preheat the Oven: Preheat the oven to 400 degrees Fahrenheit. Toss cherry tomatoes and garlic cloves in olive oil and salt in a 9×13 inch baking dish. Make a well in the center and add the Boursin cheese. Bake for 10 minutes.
- Prepare the Orzo: Remove the dish from the oven and stir in orzo, broth, Italian seasoning, and spinach leaves. Bake for 20-25 minutes, or until the liquid is absorbed.
