Description

These Boston Cream Pie Cookies are a delightful twist on the classic dessert, featuring soft vanilla cookies filled with a rich vanilla custard and topped with smooth chocolate ganache.


Ingredients

  • 1 box yellow cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 1/2 cups milk
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp corn syrup
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the yellow cake mix, vegetable oil, and eggs until well combined to form a dough.
  3. Scoop dough onto the prepared baking sheet and slightly flatten. Bake for 8-10 minutes until edges are set. Allow to cool completely.
  4. In another bowl, whisk together instant vanilla pudding mix and milk until thickened. Refrigerate until ready to use.
  5. To make the ganache, heat heavy cream in a saucepan until simmering, then pour over the chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth. Mix in corn syrup and vanilla extract.
  6. Once cookies are cooled, spoon or pipe the chilled vanilla pudding onto the flat side of one cookie, then top with another cookie to form a sandwich.
  7. Spoon or drizzle ganache over the top of each sandwich cookie.
  8. Refrigerate cookies until ready to serve.
