Ingredients

Chicken:

  • 1 lb chicken breasts (or thighs), sliced into thin pieces

Marinade:

  • 1 tbsp light soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tbsp cornstarch

Sauce:

  • 1/2 cup chicken broth
  • 2 tbsp light soy sauce
  • 2 tbsp Shaoxing wine
  • 2 tsp dark soy sauce
  • 1 tbsp cornstarch
  • 1 1/2 tbsp sugar
  • 2 tsp coarsely ground black pepper
  • 1/8 tsp salt

Stir Fry:

  • 2 tbsp peanut oil
  • 1 tbsp minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped

Instructions

  1. Marinate the Chicken: Combine chicken, soy sauce, wine, and cornstarch. Marinate for 10-15 minutes.
  2. Prepare the Sauce: Combine all sauce ingredients in a bowl and set aside.
  3. Cook the Chicken: Sear marinated chicken in hot oil until browned. Set aside.
  4. Stir-Fry: Cook ginger, garlic, onion, and peppers. Add sauce and thicken. Return chicken to the skillet.
  5. Serve: Transfer to a plate and serve hot.
