Description
A classic and flavorful chicken salad made with tender chicken, fresh veggies, and a creamy, tangy dressing. Perfect for sandwiches, crackers, or salads!
Ingredients
- 3 cups cooked chicken (leftover shredded chicken, rotisserie chicken, or 2 cans of Costco canned chicken)
- 1/4 cup red onion, finely chopped
- 2 celery stalks (including leafy tops), chopped (about 1 cup)
- 2 tbsp lemon juice
- 2 tbsp sour cream
- 3/4 cup mayonnaise
- 1/2 tsp salt
- Pepper to taste
Instructions
- Finely chop the red onion and celery.
- In a medium bowl, break up or shred the chicken into small pieces.
- Add the chopped onion, celery, lemon juice, sour cream, mayonnaise, salt, and pepper to the chicken.
- Stir to combine well.
- Chill in the fridge until ready to serve.
- Serve as is, or enjoy with sandwiches, crackers, or on top of a salad.
Notes
- For extra flavor, use rotisserie chicken.
- Chill the salad for at least 30 minutes to let the flavors meld.
- Can be stored in the fridge for up to 3 days.
- Optional additions: grapes, chopped nuts, or fresh herbs.
