Description

A classic and flavorful chicken salad made with tender chicken, fresh veggies, and a creamy, tangy dressing. Perfect for sandwiches, crackers, or salads!


Ingredients

  • 3 cups cooked chicken (leftover shredded chicken, rotisserie chicken, or 2 cans of Costco canned chicken)
  • 1/4 cup red onion, finely chopped
  • 2 celery stalks (including leafy tops), chopped (about 1 cup)
  • 2 tbsp lemon juice
  • 2 tbsp sour cream
  • 3/4 cup mayonnaise
  • 1/2 tsp salt
  • Pepper to taste


Instructions

  1. Finely chop the red onion and celery.
  2. In a medium bowl, break up or shred the chicken into small pieces.
  3. Add the chopped onion, celery, lemon juice, sour cream, mayonnaise, salt, and pepper to the chicken.
  4. Stir to combine well.
  5. Chill in the fridge until ready to serve.
  6. Serve as is, or enjoy with sandwiches, crackers, or on top of a salad.

Notes

  • For extra flavor, use rotisserie chicken.
  • Chill the salad for at least 30 minutes to let the flavors meld.
  • Can be stored in the fridge for up to 3 days.
