Description

These apple pie bars feature a buttery shortbread crust, cinnamon-spiced apple filling, and a crumbly streusel topping—bringing all the cozy flavors of a classic apple pie in an easy-to-serve bar form.

Ingredients

  • For the Crust:
  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • For the Apple Filling:
  • 3 large apples, peeled and thinly sliced
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour
  • For the Streusel Topping:
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Prepare the crust: In a medium bowl, mix melted butter, sugar, and vanilla extract. Add flour and stir until combined. Press the mixture evenly into the prepared pan.
  3. Bake the crust for 15 minutes, or until lightly golden. Set aside to cool slightly.
  4. Prepare the apple filling: In a large bowl, toss sliced apples with both sugars, cinnamon, nutmeg, and flour until evenly coated.
  5. Layer the apple mixture evenly over the baked crust.
  6. Prepare the streusel topping: In a small bowl, combine oats, brown sugar, and flour. Stir in melted butter until the mixture becomes crumbly.
  7. Sprinkle the streusel evenly over the apple layer.
  8. Bake for 30–35 minutes, or until the apples are tender and the topping is golden brown.
  9. Remove from the oven and let cool completely before cutting into bars. Serve and enjoy!

Notes

  • Use a mix of sweet and tart apples (like Honeycrisp and Granny Smith) for balanced flavor.
  • Let the bars cool completely for clean cuts.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
