Description

Delight in these Amish Oatmeal Rhubarb Bars that perfectly balance the wholesome goodness of oats with the tangy sweetness of rhubarb. These bars are easy to make and even easier to enjoy!


Ingredients

Oat Crumble:

  • 1 ½ cups old-fashioned oats
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar, packed
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (1 ½ sticks) cold unsalted butter, cut into cubes

Rhubarb Filling:

  • 3 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • ½ cup water
  • 1 tsp vanilla extract

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9×13 inch pan or line it with parchment paper.
  2. Prepare the Oat Crumble: In a large bowl, combine oats, flour, brown sugar, baking soda, and salt. Cut in the butter using a pastry cutter or your hands until the mixture is crumbly and holds together when squeezed.
  3. Prepare the Filling: In a saucepan, stir together rhubarb, sugar, cornstarch, and water. Bring to a simmer over medium heat, stirring constantly until it thickens, about 5–7 minutes. Remove from heat and stir in the vanilla.
  4. Assemble the Bars: Press half of the oat mixture into the bottom of the pan. Pour the rhubarb filling evenly over the crust, then sprinkle the remaining oat mixture over the top.
  5. Bake and Cool: Bake for 30–35 minutes, or until the top is golden brown and the filling is bubbling. Let cool completely before cutting into bars.
