These air fryer egg bites are a delicious and convenient option for breakfast or brunch. Packed with protein and customizable with your favorite veggies, they are easy to make and perfect for meal prep.
Ingredients
Egg Bites:
- 6 large eggs
- 1/4 cup milk of your choice (skim milk, 1% milk, whole milk, or lactose-free milk)
- 1 cup quick-cooking vegetables of your choice*, diced into 1/4″ pieces
- 1/2 cup shredded cheese of your choice (cheddar, mozzarella, cheddar jack, gruyere, etc.)
- Salt and pepper, to taste
Toppings:
- Ripe avocado, diced
- Cherry tomatoes, halved
- Green onions, sliced
Instructions
- Preheat air fryer to 300ºF. If air fryer doesn’t have a preheat mode, heat for 2 minutes before adding the egg bites.
- Add all egg bite ingredients to a large bowl and whisk together.
- Distribute egg mixture evenly among 12 silicone muffin liners, filling each about 2/3 full (approximately 1/4 cup per liner).
- Gently place cups in air fryer basket and air fry for 10-12 minutes until cooked through.
- Check for doneness by slicing one egg cup in the middle; if runny, cook for another 2 minutes.
- Top egg bites with diced avocado, tomato, and green onions.
- Store leftovers in an airtight container in the fridge for up to 5 days.

- Vegetable Note: Avoid using raw root vegetables like potatoes, beets, or carrots.
- Microwave Note: Microwave in 4 oz. mason jars for 60 seconds for a quicker cooking option.
